Ingredients:
2 cans tuna packed in water, drained
6 medium tomatoes, cored and seeded
1 cup red peppers, seeded and diced
2 stalks celery, diced
1/2 onion, minced
2 tablespoons olive oil
Salt and pepper
Dressing:
4 tablespoons light mayonnaise
1/2 onion, chopped
2 tablespoons lemon juice
1 garlic clove, crushed
1 cup parsley
2 tablespoons cider vinegar
Preparation:
In a medium bowl, combine tuna, red peppers, celery, 1/2 onion, olive oil, salt and pepper. In a blender combine mayonnaise, 1/2 onion, lemon juice, garlic clove, parsley and vinegar. Blended until combined about 2 minutes. Stuff the tomatoes with the tuna mixture.
